Prosciutto & pesto fish gratin

Transform white fish fillets into a creamy delight with this speedy and delicious recipe.

  1. Preheat your oven to 200°C (or 180°C for a fan oven) and gas mark 6. Season the fish fillets generously, then wrap each one in a slice of ham. Arrange them in a large baking dish. Spoon the crème fraîche between the fillets and on the exposed parts of the fish. Add dollops of pesto around the fillets as well. Sprinkle with cheese.
  2. Bake the fish for 15 to 20 minutes, adding pine nuts midway through, until the crème fraîche creates a lovely sauce around the fish and the cheese and ham take on a golden hue. Serve with plenty of crusty bread for savouring that delicious sauce.
