- Preheat your oven to 200°C (or 180°C for a fan oven) and gas mark 6. Season the fish fillets generously, then wrap each one in a slice of ham. Arrange them in a large baking dish. Spoon the crème fraîche between the fillets and on the exposed parts of the fish. Add dollops of pesto around the fillets as well. Sprinkle with cheese.
- Bake the fish for 15 to 20 minutes, adding pine nuts midway through, until the crème fraîche creates a lovely sauce around the fish and the cheese and ham take on a golden hue. Serve with plenty of crusty bread for savouring that delicious sauce.
