What is it?
Witches are like a type of sole, similar to lemon sole but much thinner. It is sometimes called Torbay sole. The flesh is very white and delicate.

You can have the head off and the fins trimmed or have them filleted.

Is it sustainable?
Our witches come from Looe. The Cornwall Sea Fisheries District manage the waters here and the MCS regard this as a good choice.
