What is it?
Whiting is a white, round sea fish. It is a small member of the cod family and very similar in flavour but is more economical and sustainable to buy than cod. Its flesh is light, firm, lean, sweet and delicate but can turn mushy if cooked too slowly.
Preparation Options
We sometimes have whole whiting these are already gutted and can be baked as they are. Otherwise we have fillets, these have a small number of bones at the very top.
Is it sustainable?
Our whiting comes from Looe and are line caught. The MCS regard whiting as unsustainable because there isn't a high demand and a large amount of what is caught by fishermen is discarded.
