What is it?
Scallops are an expensive but delicious shellfish with a delicate taste. They have two fan-shaped shells which contain rounds of firm white flesh, usually with the edible cream and orange coral (or roe) attached.
Preparation Options
Scallops are usually out of the shell an ready to go, the orange roe is edible but some people like to remove this. If they are in the shell you need to slide a knife along the flat shell remove the bits you can't eat and scoop the meat out.
Is it sustainable?
Our scallops are dredged and come from Scotland and Cornwall. There has been a lot of bad press about dredging, but if done by an environmentally responsible fishery scallops are a sustainable choice. The MSC recommend Scottish scallops as a more sustainable choice.
