What is it?
Redfish is a white fish and can be used as an alternative to cod or haddock. It is sometimes referred to as red bream or ocean perch. It goes well in fish pies or fish cakes. It doesn't have a huge amount of flavour so you will need to add something to it.
Preparation Options
You can have the whole fish fillet although most of the time they are already done. They have lots of scales so these will need to be removed or you can have it skinned completely. The fillets will contain a a few bones right at the top.
Is it sustainable?
Redfish is a deep water fish so we have to get these from Grimsby where the boats go out further. The MCS regard this as a fish to avoid as little research has been conducted on the deep sea ecosystem.
