What is it?
Red mullet is a light-pink fish with a jacket of scales. It has a fine and delicately flavoured, white, textured flesh.
Preparation Options
You can have the head off to cook it whole, or have it filleted. The average fish will produce two fillets, there will be a few small bones running down the middle of each fillet.
Is it sustainable?
Our red mullet come from Looe these are well managed waters with an enforced minimum landing size. No formal assessment has been conducted on the size of the stock but surveys indicate a high level.
