What is it?
Pollack is a white, flaky fish that is an excellent substitute for cod and can rival cod’s flavour when fresh. It has an olive-green back and a pale-silver belly.
Preparation Options
Our pollack is usually in fillets, you can have the fillets skinned, the top is thicker and contains a few bones, the tail is thinner and contains no bones.
Is it sustainable?
Our pollack comes from Looe and are line caught. The MCS say that this is the most sustainable choice for this species.
