What is it?
Plaice is a popular orange-spotted flat sea fish with a mild, sweet flavour. At certain times of the year, around November, plaice can fill up with roe and this makes the flesh watery.
Preparation Options
We usually have whole and fillets of plaice. You can remove the head and fins from the whole ones and bake them. The fillets are ready to go the will have a few small bones at the top of the fillet.
Is it sustainable?
Our plaice come from Looe if they are whole and Grimsby if they are filleted. The stock in the North Sea is classified as healthy and fishing mortality is at a sustainable level. The is no information about the fish from the English Channel.
