What is it?
Also know as rock salmon huss is a dogfish like a small shark. It is usually skinned and looks like eel when prepared. The flesh has a texture similar to salmon with a sweet flavour.
Preparation Options
You can have huss cut up into small steaks with a small bone in the middle or get it filleted. The fillets may contain a few small pin bones.
Is it sustainable?
The MSC say the huss is unsustainable as not enough research has been done and they are slow growing, however stocks are stable.
