What is it?
Halibut is a very large flat fish ,we sometimes get them as big as 70kg and they can get even bigger. Its firm, meaty white flesh has a delicious flavour but it can dry out quite easily so needs careful cooking.
Preparation Options
You can have halibut on the bone as a large steak or in fillets. The fillets will contain no bones.
Is it sustainable?
There are concerns about the sustainability of wild halibut because not enough research has been done on the stock levels.
