What is it?
Dover sole is a long, slipper-shaped flatfish with a small head, light-brown mottled skin and a creamy underside. The skin is similar to a cat’s tongue, as it’s coarse to the touch when brushed from tail to head. The meat is firm but delicate and flavourful with a meaty texture.
Preparation Options
You can have Dover sole skinned with its head off and fins trimmed or have it filleted in four long strips. Dover sole is traditionally skinned on the darker side only, leaving the white skin of the underside in place.
Is it sustainable?
Our Dover sole comes from Looe and are gill or fixed netted. The MCS doesn't have any information on how sustainable this is, stock levels are fluctuating but are unlikely to fall below a safe level.
