What is it?
Dab is the smallest of the flatfish. It looks similar to plaice and has a rough skin with firm sweet flesh. It’s caught mainly in British inshore waters as bycatch, but is growing in popularity as a sustainable and cheaper alternative to plaice.
Preparation Options
You can have the head off and the fins trimmed or have them filleted.
Is it sustainable?
Our Dabs come from Looe. Dab stocks are not formally assessed, but recent studies suggest that dab is the most abundant fish species in the North Sea, after sandeel. Cornwall, North Wales and Northwestern Seafisheries Districts currently offer the best local management.
