What is it?
Bass has a firm, creamy-white, slightly oily flesh that is like a cross between cod and mackerel. We sell wild line caught bass, framed bass and farmed bass fillets. You can put the fillets in some seasoned flour and pan fry or bake them whole.
Preparation Options
You will need to have a whole bass scaled and gutted, although if you intend to bake it in sea salt some recipes recommend leaving the scales on. The fillets will contain a few bones at the very top.
Is it sustainable?
Our wild bass are line caught and come from Looe, the MCS say that wild bass are unsustainable because they are in high demand, however this is the most sustainable way for fishing for them. The MCS say the farmed bass are also unsustainable as they require more fish to feed than they actually produce.
